The garden is going strong now. Roma tomatoes, basil, yellow squash, bell peppers.

Several times a week I gather the bounty and make tomato sauce. We eat what we can and freeze the rest.

Simmer lots of garlic in olive oil.
Add cut up tomatoes and basil, salt and pepper.
Simmer until the tomatoes liquify.
Add a good dose of chianti. At least 8 ounces.
Simmer some more.
Blend it all up in an electric blender and then strain it to remove the seeds and skins.
Add tomato paste.
When the sauce bubbles, add cut up squashes and bell peppers, and I like to splash in some hot sauce.
Simmer until the veggies are tender.

Though the alcohol cooks out of the wine, this food is intoxicating. I eat a big bowl and I feel light, floating, intoxicated. Must be the wallop of garlic, the garden freshness ... perhaps some of the chianti that I don’t put in the sauce.

You're so helpful Elizabeth!

FOOD

I have a fast body metabolism, I need to eat several times a day a little at a time. Most often I eat healthy, but not as well as I'd like to eat, due to financial poverty. I become faint, dizzy and cranky if I don't eat because of low iron deficiency in which I take iron pills for anemia.

I love combining a can of salmon with cottage cheese and green chives, this combo is delicious to me, I eat it three or 4 times a week.

I seldom eat meat, because I cannot afford to buy it. Occasionally I'll eat what I love most which is chicken.

The rich versus the poor, they eat the poor don't! Yet the poor is really richer, because the poor has learned to share and give what she/he has got, has learned humility and grown from that. "It is easier for a camel to go through the eye of a needle than for a rich man to get into the gates of heaven"

However there are many rich who donate to charities, I say donate to families who need it in the community. Donate a box of orange juice to a family, or a few steaks, let the poor have a taste of the good food. Adopt a family in the community and help them all year long with good groceries, like brocoli, orange juice, steaks, salads, foods the poor don't get to eat much of.

Thanks Tomas ...i'll save it to my favorites : )

I don't have much time to prepare stuff...so i frequent a raw food restaurant for fancy stuff...but i'm getting kinda sick of the food now...it's all tasteing the same...i decided to just juice and eat lots of young coconut (coconut water is the bomb & eatting the pudding-like soft coconut inside)...and just eat the raw veggies as is...like have nothing but watermelon for breakfast lunch or dinner...or whatever....a plate of sweet red peppers...i'm starting to feel sick when i eat processed foods now...my weakness is pizza....and i love dairy...i'm not gonna give up yogurt, brown rice & healthy breads & gonna do soup in the winter.

i also eat a lot of superfoods: spirulina & hemp seeds hemps seeds are great in plain yogurt with fresh bannanas or strawberries & honey : )
